On Thursday, Oct. 3, Kevin Johnson, executive chef and owner of The Grocery in Charleston, will be the participating chef at Thornhill Farm for the Outstanding in the Field dinner, a culinary adventure which travels throughout the country hosting special dinners at venues ranging from farms and caves to islands and ranches.
Outstanding in the Field returns to Thornhill Farm for a unique stop on the ninth North American tour. The Oct. 3 event begins with a tour from host farmer Maria Baldwin followed by a locally sourced dinner under a beautiful pole barn overlooking the farm. Chef Kevin Johnson, known for his focus on fresh and local ingredients at The Grocery, will work to conceptualize and execute the special menu using local purveyors and products, including Baldwin, cookware from Le Creuset, wine from Grassroots Wine and spirits from High Wire Distilling, mixed by The Grocery’s own bar manager Hallie Arnold. Students from The Culinary Institute of Charleston will be on-site helping execute the dinner.
“I am honored to be a part of Outstanding in the Field and excited to share this evening with guests, purveyors, teammates from the restaurant and many others,” says chef Johnson. “We created this menu to tell a story. It will begin with hors d’oeuvres that represent The Grocery as it is right now and how it began, before a second course celebrating Southern ingredients and pickling. Next we will progress to a dish that represents the Mediterranean influences seen on our menu, before finishing with a dessert that pulls from my childhood and culinary lessons I learned from my grandfather. Overall, this menu will help explain how The Grocery began, showcase all of the ingredients that have influenced the journey and also give diners a peek at what is to come in the future.”
