January 21 episode to highlight chef’s Outstanding in the Field event
On Tuesday, Jan. 21 The Chew is set to air a segment featuring Kevin Johnson, executive chef and owner of The Grocery, and his participation in the Outstanding in the Field dinner held at Thornhill Farm last Fall. The show will air at 1 p.m. on ABC.
The segment focuses on the Lowcountry, including the return of the traveling dining experience to Thornhill Farm in McClennanville. The event took place on October 3, 2013 and included a cocktail hour with bites, a tour from host farmers and a multi-course, family-style meal conceptualized and executed by chef Johnson and his team.
The event also highlighted many local businesses and products, including Thornhill produce, Le Creuset cookware, Grassroots Wine and spirits from High Wire Distilling, mixed by The Grocery’s own bar manager Hallie Arnold. Students from The Culinary Institute of Charleston also had the chance to participate on-site and help prepare the meal.
The dinner began with hors d’oeuvres representing the restaurant’s ethos, then progressed through a four-course, family style supper that was a narrative of his cooking, from his start as a vegetarian to a dessert inspired by his days with his grandfather.
The menu included: hors d’oeuvre such as grilled chicken heart lettuce wraps and grilled flatbread with butter bean hummus and charred eggplant. A warm salad of kale and collards with bagna cauda vinaigrette and ricotta salata began the seated portion followed by a braised golden tilefish with Hoppin’ John of Charleston gold rice and crowder peas with a pickled shrimp vinaigrette. A mix of Border Springs lamb was served with okra, spiced tomato gravy, cotija cheese and butter bean and broccoli rabe gratin and dessert was an apple tarte tatin with Tillamook extra sharp cheddar with salted peanut and sorghum swirl ice cream.
