A recipe from Captain Magwood - Shrimp Fritters
Ingredients:
1 cup self-rising flour
1 cup self-rising corn meal
1 medium sized sweet onion, chopped
1 medium sized bell pepper, chopped
A pinch of sugar
1 egg
Enough milk to make the batter stick to the spoon - not thick, but not runny
A dash of salt and pepper
1 lb shrimp
Directions:
Mix ingredients in a bowl, roll shrimp in batter and fry in grease at about 350 degrees. Lightly brown shrimp on both sides.
Serve with Magwood's sauce - 50-percent mayonnaise, 50-percent ketchup and a dash of hot sauce.
The update:
Slow and steady goes the pace for the Winds of Fortune. Captain Magwood burned a little more fuel last week then he expected, but catches remain strong and he hauled in 1,200 pounds of brown shrimp last Wednesday.

About the Captain
Captain Magwood is a third-generation shrimper on Shem Creek and son of the late Captain Junior Magwood. He has been shrimping and selling his catch to the local market for 30 years. You can find Captain Magwood and his "Winds of Fortune" at 110 Haddrell Street, next to the Wreck Restaurant.
