Viscious Biscuit

Vicious Biscuit Co. will be bringing a biscuit-centric breakfast spot to Mount Pleasant in the summer of 2018.

Born out of the desire to establish a casual, funky breakfast joint for the Charleston community, Vicious Biscuit Co. will begin serving hearty, flavorful “fork and knife” biscuits, biscuit sandwiches, build-your-own Bloody Marys and local craft beers in Mount Pleasant starting this summer. The vision of partners and Charleston locals Joshua Lambert and Michael Greeley, Vicious Biscuit Co. will take over the empty building on Coleman Boulevard previously occupied by Boulevard Diner.

“It’s always been my dream to own a restaurant,” says Greeley, who has more than 20 years experience in the food and beverage industry. “With a young son, mornings are always go go go, and we realized there wasn’t a place serving a great, satisfying breakfast by the time we got out of the house.” With that, Greeley and his wife Carly launched Vicious Biscuit Co. as a catering operation in early 2017, with plans to open a brick and mortar restaurant down the road.

Lambert — a former traveling chef — and a few of his business partners were actively looking into the idea of opening a fast-casual, biscuit focused restaurant, when they caught wind of Vicious Biscuit Co. from a piece in the Post and Courier. Without realizing it, Lambert and Greeley had designed essentially the same concept. “Instead of trying to compete with him, we immediately decided we wanted to partner with Michael to bring an awesome restaurant to Charleston,” Lambert says. “The next day, we were in Michael’s kitchen talking about how we could all work together. Now it’s finally becoming a reality.”

When Vicious Biscuit Co. opens in late spring, early summer with Greeley in the kitchen and Lambert running front of the house, guests can expect several signature biscuits like the Ranchero, served with black bean spread, panko-breaded avocado, pico de gallo, and a sunny side egg; the Flamethrower, served on a cheddar and jalapeño biscuit with spicy fried chicken, white cheddar, candied bacon, spicy mayo and “cowboy candy” and the Scotlyn, a cinnamon cream cheese stuffed biscuit deep fried and topped with strawberry jam preserves, maple syrup and homemade lavender vanilla bean whip. Biscuits will also be served as stand-alone items that can be customized with a self-serve jam and butter bar featuring Greeley’s homemade spreads.

Vicious Biscuit Co. will look to highlight locally sourced ingredients — like freshly caught seafood, free range eggs and Geechie Boy Mill grits — in its dishes, and will offer some lighter fare options like seasonal salads, fresh fruit plates, yogurt with house-made granola and steel cut oats with fresh berries. Guests will enjoy a build-your-own Bloody Mary bar, fresh squeezed mimosas and local craft beers to complement the food menu.

“We want our guests to leave feeling like they got ‘one mean breakfast’ at Vicious Biscuit,” Lambert says. “We hope it becomes a place where people want to come back again and again, because it’s that satisfying, stick-to-your-ribs kind of comfort food served in a fun, high energy atmosphere.”

Vicious Biscuit Co. will be open seven days a week and will have seating for approximately 90 guests with indoor and outdoor dining. The restaurant will take over the former Boulevard Diner space, which was completely gutted and re-designed by Neil Stevenson Architects.
